Try these Homemade Burgers :-)

 

Bored of eating Mcdonald’s , Burger king and those processed meat patties inside ?

why not make our own burgers at home fresh and tasty .

It doesn’t take much time and taste so much better!

  Preparation Time: 15 mins         Cooking time :30- 40 mins

   Serves – 2 

Ingredients:

Tomato  slices (few ) to put inside burgers .

Onion slices   , few (optional)

Green pepper ( few slices)

Burger bread(4)

Cheese slices (4)

Omelette (2 eggs) To put as layer inside Burger.

You can add lettuce leaves as well, I didn’t have so didnt put.

for the patties:

Minced meat (250 gms)

1 egg

chopped Green chili -1 (optional)

chopped onion – 10-15 gm ( finely chop one slice of onion)

Salt -1 teaspoon

Pepper-1/2 teaspoon

Garlic Powder-1/2 teaspoon

chili powder-1/2 teaspoon

Chopped Persil ( 7-8 leaves)

Olive oil for shallow frying

Directions :

We will prepare the patties first , Add the spices, chopped onion,chili, fresh persil and one egg into the minced meat .

Mix it well and prepare round balls , flatten them with fingers softly and do the same to prepare remaining patties.

Now we will shallow fry them, until they turn brown both sides.

Okay so our patties are done, let’s prepare our burgers!

We will prepare the omelette to put inside the burger as layer, cut into piece to add to 4 burgers.

Put the omelette on lower bread, place the patty over omelette .Add the sliced onion,tomatoes,pepper and cheese slice on top and  put the top cover bread.

We will bake the burger for few mins in oven, till our cheese melts.

Frittes Omelettes

 

Another recipe from my husband , quite similar to Tortilla spanish omelette,  It is quite easy and do try it out when you are bored of normal omelette.

Here is the recipe

Preparation time: 10 minutes                   Cooking time : 15 minutes

Serves : 2

Ingredients

2 big potatoes

2 eggs.

3 tablespoon of milk.

Some shredded cheese for topping and 2 cheese portions.

To Sprinkle (pepper powder,garlic powder, salt,chili powder as per your taste)

Fresh chopped parsley or coriander.

One spring onion chopped( white part)

half chopped  yellow pepper

2 tablespoon of oil.

 

Directions :

Add oil to wok and start frying the potatoes on medium flame. Cover on low flame for 3-4 mins till they become soft.

Meanwhile beat the eggs with chopped onion , pepper and spices. Add milk to the eggs.

 

Check the potatoes if they are soft.

Now add the egg mixture to the potatoes ,

Do not move the beaten eggs mix in pan,  let it cook on low flame , add the portion cheese , chopped  parsley and cover with  shredded cheese .

Once you see the eggs  looked cooked and cheese is melted, turn off the flame.

You can eat it like this or with bread as you prefer.

What about these Cheesy Balls in this boring weather ?

I had a craving for  cheese balls from  past few weeks and last week we had  them at a fast food joint here but they were so pathetic  😦

After last weekend’s  disappointment, my husband surprised me with some nice cheese bombs today  ,haha too big to call them balls 😀

I loved them , hope you will like them too .

Here is the recipe

Preparation time: 25 minutes                               Cooking time : 15 minutes

Serves : 2

Ingredients

3 big potatoes

4 -5 tablespoon all purpose flour.

2 eggs.

4-5 tablespoon of bread crumb powder.

4-5  Gouda cheese slices and cut  into small squares ( You can use other cheese as well that you prefer like mozzarella )

1/4  teaspoon pepper powder

1/2 teaspoon garlic powder.

1/4rth  teaspoon salt.

1/2 teaspoon chili powder

1 teaspoon salt.

Fresh chopped persil .

One spring onion chopped( white part)

half grated green chili (  used moroccan chili, they are big and not so hot)

Directions :

Boil the potatoes  in a pressure cooker for 10 minutes and  then mash them .

Chop the persil,onion .

Add  them to the mashed potatoes along with spices .IMG_7450

Now Add the chili to the paste.

Now make flat  round patties  of the mixture and add cheese in center,

fold into a ball ,keep aside and make balls similarly with remaining paste.

Heat the oil for frying in vessel.

You now have the dip the ball in egg first, then  flour and lastly in bread crumb powder.


Add to the oil and start frying the balls until they become golden brown .

Pasta Tagliatelle with Creamy Spinach sauce

A simple  dinner idea is Pasta with spinach sauce.

I  think from family of green leafy vegetables ,spinach is my favorite. Whenever I think of eating more green stuff, spinach comes to my rescue. It tastes great with pasta, I added some mushrooms too which made it even more tasty!

Presenting you a simple recipe from our kitchen.

Preparation time – 15 minutes                                Cooking time  :20 minutes  

Serves-2 Hungry  people

Ingredients needed:

250 g  pasta or half packet

1 cup  low fat cream,

Canned mushrooms, 7-8 sliced, or fresh ones as you prefer .

spinach paste/puree  100 gm. ( I used frozen portions of spinach)

1 big tablespoon olive oil

1/2 teaspoon dried oregano ,

1/2 teaspoon garlic powder.

1/2 teaspoon dried parsley/persil

Salt, pepper as per your taste.

50-60  gm mixed cheese ( from any super market )

Parmesan cheese powder for dressing

Method

Boil tagliatelle pasta  according to instructions on the packet, strain and keep aside.

Heat olive oil in pan , add  mushrooms and spinach portions until spinach melt and form sauce.

Add the cream . stir and add salt,pepper,garlic powder .

Add the pasta to the sauce .

Add dried herbs now like oregano, herbe de provence ,parsley. .

Toss pasta with in sauce and add cheese over it,

Sprinkle some Parmesan over pasta in your plate.

Some Paneer Pizza Tonight :)

 

I haven’t posted anything here from a week  although the recipes are piling up in my mind. Today  I have  special motivation for this post dedicated to my love for homemade pizza 🙂  Enjoy one of our recipes , and we would post more in future yay !!

One can put  a lot of ideas in it, that is why I love pizza , besides it is easy to cook and  great to eat .

Preparation Time: 15 mins

 Cooking time :15 mins

Ingredients:

Tandoori Masala (2 teaspoon)

Paneer cut into small cubes(50 gram)   (Paneer is Indian cottage cheese can be find easily in Indian Stores )

Green chili -1, small pieces (optional)

some olives

salt(1/2 teaspoon)

1 pizza base

Olive oil -1 teaspoon

Dry oregano,Persil  (for Seasoning , optional)

Shredded Cheese for topping

 

Directions :

Marinate the pieces of paneer with tandoori masala paste , some water , olive oil   , salt,chopped chili and keep aside. More you keep it, better it is.

Preheat the oven for 10-15 mins.

Place the pizza base on baking plate ,and make holes in it with a fork.

Now spread the marinade over the base ,

Cover them with some cheese  of your choice,olives or more veggies as you like .

 

Bake it for 10 minutes at 240 degree Celsius and voila   your Paneer Pizza  is ready.

Murgh kali Mirch -chicken with pepper!

Another chicken recipe – so you all know by now that I love chicken 😛

This one is not so commercially famous  but  tastes so good.It has a mild taste of cream cooked in white and black pepper.

My father’s favorite and I love it too !

Preparation Time: 15 minutes                     Cooking time :20-25 minutes

Serves : 2 

Ingredients

Chicken 200-250 grams                                                        IMG_7195

1  medium onion ( finely chopped in a chopper)

Fresh Ginger and  Garlic chopped (3-4 cloves ,chopped ginger should be same amount as garlic)

Green chillies 2 pieces (sliced) ,medium hot

Yogurt 1 cup,

Cream for cooking  1 Cup

Salt 1 tablespoon

Cumin Powder  ½ teaspoon

White pepper powder 1 teaspoon

Chili Powder ( 1/4 teaspoon) Depending on your spice level.

1 bay leaf and 4-5 pepper corns.

Oil – 2 tablespoon

Crushed black pepper ,Garam masala 1/4 teaspoon ,chopped coriander leaves for Garnishing

Method: 
Grind onion,ginger garlic as a paste or finely chop them using chopper.
slit each chili into long 4 pieces.
In a wok/pan  heat oil  and  add 1 chili,bay leaf and peppercorns.

Splutter them for a minute or less.
Add the paste of onion and ginger garlic .

fry the chopped onions and green chillies. Saute till the onions become light brown.

Add the spices and fry for a minute,

add now chicken and remaining one chili. Sauté for 5 minutes

Add yogurt now and stir, put the lid on for 3-4 minutes.

Add now cream and crushed pepper, garam masala and simmer on low flame it for 5 minutes.

Let oil separate from gravy and become thick, garnish it with coriander .

Serve hot with chapati or rice .

Ijaa (Chakchouka with Sausage )

Chakchouka ( read as Shakshuka)  is quite popular mediterranean food and easy to cook as well . In Algeria and Tunisia they add merguez (sausages ) to it which even makes it more tasty!

Do give it a try, I am sure you will love this combination of eggs,sausages, and spices

Preparation time : 10 minutes                                            Cooking time : 15-20 mins

Serves :2 

Ingredients

Tomato  1 medium size ,cut into big pieces

Onion-1  medium size,finely choppedIMG_7178

Green pepper  –  1/2 ,finely chopped

Garlic -4 big cloves finely chopped

Sausages -2

Tomato puree or sauce -2 tablespoon

Green chili -1 (medium hot) finely chopped

Salt -1 teaspoon

Pepper-1/2 teaspoon

Cumin powder-1/2 teaspoon

chili powder-1/2 teaspoon

paprika powder -1/2 teaspoon

Persil  (for dressing)

2 big eggs

2 tablespoon Olive oil

(You can even add Harisa to it, if you like very spicy,I prefer it medium hot.

**Harisa is chili paste for my friends who donot know.

*If is hard to find freshly made sausages like in India , it can be substituted with kebab or small meat balls made  from keema)

Directions:

In a wok/pan  heat oil  and  add chopped onion,garlic,chili and green pepper and fry them for 3-4 minutes on medium flame.

Add the spices and fry for a minute.

Add now tomatoes. Sauté for 2 minutes.

Now add pieces of sausage,and fry them until they look cooked.

Now add  tomato paste  and salt.Cover the lid for 3-4 minutes on low flame.

Now add eggs on top, do not move the eggs and let it cook on low flame.

Top it with some persil or coriander and enjoy with bread .

Pulao – Basmati Rice cooked with Chicken,Spices and Pickle

This is an easy recipe, tastes good too,  especially for people who love the aroma and taste of Indian Pickles.

Preparation Time:15-20 minutes                   Cooking time:20 minutes

Eating time : 5 mins 😛

Serves :2

Ingredients:

1 Potato peeled ,cut into small pieces

chicken boneless 150 gm

Green peas- half cup

green pepper- half

ginger-same amount as garlic,finely chopped

garlic-2-3 cloves ,finely chopped

2 cups  basmati rice soaked in water for 15-20 mins.(for 2 cups rice take 2 cups of water to soak them)

1 tablespoon – Mixed pickle ( from Indian store)

1 teaspoon salt

1/2 teaspoon turmeric,

1/2 teaspoon cumin powder

1/2 teaspoon chili powder

1 teaspoon cumin seeds for frying, 1 bay leaf.

1 tablespoon olive oil.

Directions :

Put  oil in wok or cooker and heat for a minute ,add cumin seeds  and let it splutter.

Add  chicken pieces and the spices over chicken ,fry the chicken for a minute.

Add green pepper to your cooker and fry  for another 2-3 minutes on medium flame.

Now add potatoes and peas and cook for another 2 minutes.

Now add pickle to the sauce ,

and add the rice to cooker along with its water.

Add 1 bay leaf and close the lid of cooker/pot and let it cook on low flame for 10-15 minutes.

For cooker I cook it upto 2 whistles and turn it off.If you are cooking in other pot,cover it and cook over low flame and check in between if rice are cooked .Enjoy it with raita  or simple pulao is also good enough.
