Mahchi(Mahshi) – Baked Vegetables Stuffed with Rice,Minced Meat !

This dish is Algerian,  my husband calls it Mahshi but writes as Mahchi in french , I absolutely loved it,

It has rice, some minced meat, veggies,some spicy sauce and cheese on top! ,

absolutely finger licking and lip smacking good!


                                  Preparation Time: 15 mins         Cooking time :30- 40 mins

                                   Serves – 2 


Potato 1 big

Tomato    1 big

Green pepper     1 medium

Brinjal      half, medium

Minced meat (100-200 gms) Depends, if you want to add more meat and less rice in stuffing or vice-versa .

Boiled rice, 2 cups

Tomato puree or sauce -1 cup for sauce

Green chili -1

Salt -1 teaspoon

Pepper-1/2 teaspoon

Cumin powder-1/2 teaspoon

Garlic Powder-1/2 teaspoon

chili powder-1/2 teaspoon

Dry origano,Persil  (to sprinkle on sauce)

Shredded Cheese for topping

2 tablespoon Olive oil

Directions :

Peel the vegetables and make them hollow like this :


Now we will first prepare the stuffing of rice with minced meat.

Put one tablespoon of olive oil in pan, Add minced meat, Fry it with spices(salt,chili powder,cumin powder,garlic powder,pepper )  and add rice to it,



Fry the rice well and put off the flame.

Now stuff the vegetables with this rice stuffing.


Place them in baking tray.


After this, we will prepare the sauce to pour it over the stuffed vegetables,

Take oil in pan, add tomato puree, sprinkle some salt, pepper,chili powder, dried oregano and persil  on the sauce and mix with a spoon, add the chopped chili to it as well!


When you see oil separating from sauce, turn off the flame and pour it over the stuffed vegetables.


Cover them with some cheese and bake them for 20 minutes for 250 degree Celsius.Depends on your oven too if they are slow or fast, you need to adjust accordingly.


Enjoy different flavour of veggies with rice stuffing and sauce!



Breakfast Ideas- Bread Pudding

When you are bored of  your normal breakfast of eggs, bread,butter ,milk!  Here what you can do with them!

Just make this simple bread pudding for your breakfast! and you will relish it as much as I did this sunday!


The aroma of cinnamon makes you crave it more!

Cooking time: 15 minutes                         Preparation time: 5-10 mins

Serves – 2 

Ingredients you need 

  • 4 slices of sandwich bread
  • 1 big cup of milk
  • 2 Eggs
  • 2 tablespoons of sugar
  • 1 tablespoon of Vanilla essence
  • Baking powder 1 teaspoon.
  • 1 tea spoon of butter
  • Cinnamon n nutmeg powder (1/2 teaspoon each)
  • some raisins or other nuts as you like!

Directions :

Preheat the oven for 180 Degree C for 10 minutes while you are cutting bread and preparation mixture.

In the milk add baking powder, sugar, vanilla, eggs, cinnamon and nutmeg powder . Cut the bread into small pieces( I used brown bread)


Place  the bread pieces in baking tray greased with butter .


Mix well the milk with all ingredients into smooth mixture and pour it over the bread crumbs.


Add some raisins or chopped nuts and push them a bit into bread crumbs. Bake it for 12-15 minutes at 240 Degree Celsius,


Check in between if it is cooked or not, depends from oven to oven, some are slow and some are too fast to heat up.

Check if top of pudding is not getting burnt.A bit brown is enough, you will have it crunchy on top and soft in between .Enjoy!

Chili chicken chinese Style

I don’t know whether to call it Chinese or Indian, but I have always eaten it in India called as Chinese food, I didn’t find anything with that name in menu of Chinese Restaurant abroad I have been to 😀

Presenting you the spicy gravy made with  soy sauce,garlic ,onion ,green peppers and chicken dumplings. I ate it with some fried rice but you can eat it along with noodles too.

Note :It will  fill your kitchen with a nice aroma of soy sauce and you will be so hungry while cooking , it be hard to wait until the dish is cooked and served on plates! 😀 😀


Preparation time: 15 minutes                               Cooking time : 45 minutes

Serves : 2-3 


for Dumplings :

4 -5 tablespoon all purpose flour.

Chicken boneless (300 gm)

Corn flour ( 2 tablespoon)

1 tablespoon of Soy sauce

1/4 teaspoon chili powder

1/4  teaspoon pepper powder

1/2 teaspoon garlic powder.

1/4rth  teaspoon salt.

3 tablespoon oil for shallow frying Dumplings.

Sauce :

One big onion ( big pieces)                                                IMG_7023

one green pepper medium( chopped big pieces)

one green chili (chopped,small pieces, more as per your taste)

5-6 cloves of cloves finely chopped

few shreds of ginger chopped

2 tablespoon of Soy sauce

1 tablespoon vinegar.

2 tablespoon of thai sweet chili sauce

1/2 teaspoon chili powder

1/2  teaspoon pepper powder

1 teaspoon salt.

one tablespoon ketchup.

Corn flour (2 tablespoon)

sesame seeds for garnishing.

Directions :

We will prepare the dumpling first, so in a bowl add all purpose flour, corn flour, salt,pepper,red chili powder,garlic powder,soy sauce .

IMG_7019Add 50 ml water to make thick paste , you can add more water if you see it is too thick and  not cover all chicken pieces.

IMG_7020Add now chicken pieces to it ,

IMG_7021Keep the pan on medium flame, add oil and start adding chicken piece.

IMG_7022If you see  chicken too visible in dumplings ,add some paste of flour on top of them. Fry them until they turn golden brown. fry all chicken pieces in batch of 4-5 as per your pan size and ability to turn and check them.

IMG_7024Take them out and keep on plate with tissue and absorb extra oil .

Now we will prepare the sauce , 

Add oil to the wok, once heated ,add ginger garlic and chili pieces first.Saute them.Keep some chopped garlic for later when adding water to sauce.


Once,done add the onion pieces and saute them until they become a bit transparent.


Add the green pepper at end,since they cook faster and they should not be too soft, a bit crunchy taste better in curry.


Now,add soy sauce,salt ,pepper,chili powder, thai chili sauce and vinegar.

IMG_7028Add about 200 ml of water into the wok  and add one chopped garlic clove, let it come to a boil.

IMG_7030Take 2 tablespoon of cornflour, mix in 50 ml water , and add to the wok.


Stir the sauce until you see it become thick.Taste the salt and spice level. You can add more as per your taste. Now add a tablespoon of ketchup to give it a bit sweet taste.You can skip it as well if you don’t like sweet taste in your food.

Add back the dumpling to the sauce  ,cover , put on low flame for 3-4 mins.


For garnishing add sesame seeds on top and eat it fried rice or noodles.

Rice with fish and Vegetables

This week my Dear husband is in cooking mode so you will have more recipes from him this week  than me.

He loves to eat this rice cooked  with fish and some veggies , some sort of paella you can say but not completely as ours doesn’t have much combinations of seafood.

You can add other seafood to it as well.My Indian friends do like it more spicy ,go ahead to add some garam masala and more spices to it.


Preparation time : 15 mins  (30 minutes  marinating time minimum)

Cooking time: 20 minutes

Ingredients :

1 cup Rice.

I fish filet small pieces.

I cup chopped vegetables.(carrots,green beans,potatoes,peas)

Half green chili,(those big ones which are not so hot)

One big garlic clove finely chopped.

1 teaspoon salt

1/4rth teaspoon turmeric.

1/2rth Cumin Powder.

1/4rth Chili Powder.

One tablespoon olive oil.



Directions :

Soak the rice in water for 30 minutes and add  spices to fish and veggies as marinade and keep aside .


After 30 mins, Add oil to wok, add the chopped garlic and chilli,fry for a minute.


Now ,add marinated fish and veggies to wok,saute them.


Now add,one cup water and rice to it.



Cook it on low flame for 10-15 minutes with lid covered,

check if  rice are cooked and water is absorbed,well .If you see some water like below, cook on low flame for another 5-7 minutes with lid covered.


Serve the rice hot as main dish ,with some salad.


Gratin with Cauliflower,some carrots and green peas!

Love this  recipe from my husband, it is different than normal Gratin as it has some flavor of spices and the binding from eggs not flour, needs less butter and hence it is lighter as well.

1/2  head cauliflower, cut into large florets

1 small carrot ,finely chopped.

Some Green peas.(handful)
1/2 teaspoon freshly ground black pepper.

1/4rth Red chilli Powder

1/2 Teaspoon Garlic Powder.

1/4rth cumin Powder.

One teaspoon of olive oil.

1  teaspoon salt.

1 teaspoon lemon juice.

2 eggs.

1 tablespoon unsalted butter
2 cups low fat cream
1/2 cup freshly grated cheese (your choice ,I used mozzarella)

2 portions of cheese (la vache qui rit)    ( optional)

Preheat the oven to 375 degrees F.

Cook the cauliflower florets ,pieces carrot and  green peas  in a large pot of boiling salted water for 6 to 8 minutes, until tender but still firm. Drain .

Add some lemon juice , salt,pepper,chilli powder,cumin powder,garlic powder,, few drops of olive oil and mix well in vegetables and keep aside.

In a bowl add cream,eggs  and mix well.

Grease the baking tray with butter, place the cauliflower florets,carrot,green peas in it.


Add the cheese portions on it, pour the mixture of cream and eggs .Cover it with grated cheese.

Allow it to bake for 15-20 minutes and check if the cheese on top looked golden now.


Fall Ideas for Home.

This weekend I was busy searching  some stuff for my dining table to give it some Fall touch , I love to set up the table for us two and enjoy our meals.

So in this weary weather continued from last week,when we can’t go out much  , least I can do is change few colours around me,cook a nice meal and enjoy on a well laid table! ,so that’s  what I did this weekend. I found some combinations of rust, browns and reds and were perfect for a fall table.


I also found some nice flowers for my vase, and my pots.

While I was doing all this, my sofa was staring and frowning at me, so I put a nice rust red sheet over it and brown cushions to match with everything around.

Baingan -(Brinjals in sauce made of onion,tomatoes and Yogurt)

This recipe I have learnt few months before and I am in love with it ! So sharing it with you all.

It is a simple vegetarian dish of brinjals,many people don’t like the plain taste of brinjals ;but if you combine it well with the onion,tomatoes and spices , it is just so delicious!


Preparation time:15 mins                                                                       Cooking time:30 minutes

Serves: 2-3

Ingredients :

Brinjal , 1 Big ( ~ 400 grams),cut into small pieces.

onion (1  medium, finely chopped)   1

Green chillies 1 piece (chopped)

tomato Puree 1  small Cup(100 ml) or freshly cut tomatoes

yogurt.(1 cup)

Salt 1 tablespoon

Cumin Powder  ½ teaspoon

Turmeric       ½ teaspoon

Chili Powder ( 1/4 teaspoon) Depends on your spice level.

Cumin Seeds, (1 teaspoon each)

Garam Masala(½ teaspoon)

Oil – 2 tablespoon

Chopped coriander leaves for Garnishing

In a wok/pan  heat 1 tablespoon of oil  and  add cumin seeds.
Splutter them for a minute or less.   Add brinjal pieces and saute them for 10 minutes on medium flame.3             4 - Copy
Take out the brinjal from wok in a plate.
Add  one table spoon of oil in wok, now add finely chopped   onion and chilli pieces.
Fry the chopped onions and green chillies. Saute till the onions become light brown.
Add the spices and fry for a minute.
Now  tomato puree  and salt.  Fry for a minute.
Add  back brinjals  to sauce, Add pinch of garam masala,
Put the lid on and cook on low flame for 10  minutes.
Now add yogurt to wok, mix and put back the lid for another 5 minutes.
Check before turning off the flame if brinjal pieces are soft, else cook for another 5 mins on low flame.
Garnish with some chopped coriander and enjoy with rice or roti(indian bread,also called chapati, )
