This week my Dear husband is in cooking mode so you will have more recipes from him this week than me.
He loves to eat this rice cooked with fish and some veggies , some sort of paella you can say but not completely as ours doesn’t have much combinations of seafood.
You can add other seafood to it as well.My Indian friends do like it more spicy ,go ahead to add some garam masala and more spices to it.
Preparation time : 15 mins (30 minutes marinating time minimum)
Cooking time: 20 minutes
Ingredients :
1 cup Rice.
I fish filet small pieces.
I cup chopped vegetables.(carrots,green beans,potatoes,peas)
Half green chili,(those big ones which are not so hot)
One big garlic clove finely chopped.
1 teaspoon salt
1/4rth teaspoon turmeric.
1/2rth Cumin Powder.
1/4rth Chili Powder.
One tablespoon olive oil.
Directions :
Soak the rice in water for 30 minutes and add spices to fish and veggies as marinade and keep aside .
After 30 mins, Add oil to wok, add the chopped garlic and chilli,fry for a minute.
Now ,add marinated fish and veggies to wok,saute them.
Now add,one cup water and rice to it.
Cook it on low flame for 10-15 minutes with lid covered,
check if rice are cooked and water is absorbed,well .If you see some water like below, cook on low flame for another 5-7 minutes with lid covered.
Serve the rice hot as main dish ,with some salad.

I think those brinjals are quite easy ,for baking gratin , and for curry butter chicken is easy!

Whenever I feel hungry, I jump to WP instead of the kitchen to feast my eyes on your post. I love fried rice. And this dish looks delish.

hehehe, but It will make you more hungry only looking at pictures! You need to hit the kitchen and cook something quickly! btw my husband surprised me yesterday by making chicken korma for me and kheer made from sweet potatoes!! It was amazing! He just saw me doing me and he did it better than me with his improvisations!

hehehe, yes MashaAllah ! I would do that recipe soon! InshaAllah ,I think it is traditionally from my native hometown, they make it during winters.
