Bhindi Masala Do Pyaza ( Okra Indian Style)

This one is on  special request from a very special friend , Bhindi(Okra or Ladyfingers) as it is called has a great flavor of its own. It is a favorite of many in India and those who travelled to India also fell in love with its wonderful flavour.

There are so many recipes to make it, Today I cooked Bhindi Do Pyaza ( means Okra with double onion,as we put two time the onion chopped of different size) , Normally in second time too ,the onion should be bit  fried but I just avoided it, for  we already put  so much oil  in  frying okra and onions.

Preparation Time: 10-15 mins                                                      Cooking time: 30 minutes

Serves :2 

Ingredients:

Okra  400 grams

1  small onion ( finely chopped)

Half onion (chopped big slices as seen in pic)

Green chillies 1 piece (sliced) ,Depending on hotness of chili, I took medium hot.

tomato Puree 1  small Cup(100 ml)

diced tomatoes   (1 small)

Salt 1 tablespoon

Cumin Powder  ½ teaspoon

Turmeric       ½ teaspoon

Chili Powder ( 1/4 teaspoon) Depends on your spice level.

Cumin Seeds, (1 teaspoon each)

Oil – 3 tablespoon

Garam Masala(½ teaspoon)

Chopped coriander leaves for Garnishing

Method: 
In a wok/pan  heat oil  and  add cumin seeds.
Splutter them for a minute or less.                                                      IMG_6974
Add okra and fry for 10 minutes on medium flame.
(optional : One teaspoon of lemon juice in okra while frying
to remove stickiness,otherwise it goes a bit  later when you are frying)
Take out the okra from wok in a plate.
Add  one table spoon of oil in wok, now add finely chopped   onion and chilli pieces.
Fry the chopped onions and green chillies. Saute till the onions become light brown.
Add the spices and fry for a minute.
Now  tomato puree  and salt.  Fry for a minute.
Add  back okra now to sauce, Add pinch of garam masala, big onion pieces and chopped tomatoes.
Put the lid on and cook on low flame for 5-7  minutes.
Check before turning off the flame if okra is soft, else cook for another 5 mins on low flame.
Garnish with chopped coriander and Serve hot with chapati or rice .

    I should try this recipe! In Lebanon we eat those with only tomato sauce so, as a spices lover, I’m sure I will appreciate more this recipe! And all this coriander hmmm 🙂 thank youuu Sana!
